What to do with a few over-ripe bananas? Voila!

Home and Heart's Easy Breezy Banana Bread
Turn your oven on to 350.  Lightly grease a loaf pan (and a mini loaf pan if you want to share).

Pull out your blender... peel and drop in 3 -4 ripe bananas... add  1 egg, 1/3 cup of oil, 1 tsp of vanilla and 1 teaspoon of cinnamon...

In a large bowl, scoop 1 cup whole wheat pastry flour, 1/2 cup unbleached flour, 1 tsp of baking soda and a dash of salt... lightly sift with a spatula. Measure and lay aside 1/2 cup of brown sugar.

Turn on the blender - until the bananas are blended... pour the mixture into your flour mixure along with the brown sugar... and stir until flour is moistened.  Pour the mixture into your pans and place in the oven... bake until they are firm... about 45 minutes.

Easy breezy banana bread!
